Ingredients

8-10 plum tomatoes

olive oil

Salt and pepper

1 tsp sugar

balsamic vinegar

Baguette

garlic infused olive oil

slivered basil

parmesan cheese for dusting

Preparation

Halve tomatoes and scoop out pulp Coat with olive oil and sprinkle with salt and pepper Place on foil and drizzle with balsamic Sprinkle with tsp of sugar if not using good olive oil Bake 20 minutes at 375 til tomato collapses. Cool In meantime, slice baguette and drizzle with garlic infused olive oil lightly toast One tomato per slice baguette and decorate with basil ribbons and a little cheese if desired.
