Ingredients
2 Fennel bulbs
1 Lemon
2 tablespoons EVOO
to taste Salt and Pepper
Preparation
1 - Slice fennel very thin horizontally, preferably with a mandolin. Place in a bowl.
2 - Zest lemon into bowl. Squeeze lemon juice into bowl.
Add some chopped fennel fronds into bowl.
Add salt and pepper to taste, then stir in olive oil.
Serve fennel salad on its own, or over mixed greens.
