cashew cream - must soak overnight
pesto made without cheese
spicy tomato sauce (san marzano tomatoes)
2 lbs fresh spinach – just wilted - mix with pesto made without cheese, add salt
1 large eggplant - sliced thin and sautéed
cashew parm to sprinkle on top
no bake GF lasagna
Preparation
layer x 2 tomato sauce lasagna noodle eggplant spinach dollops of cashew cream
cover with foil bake 45 minutes at 375
