Ingredients

3/4 lb. (3 sticks) unsalted butter, room temp

1 c sugar, plus extra for sprinkling

1 tsp vanilla extract

3 1/2 c all purpose flour

1 tsp kosher salt

3/4 c. minced crystallized ginger

Preparation

heat oven to 350 In bowl of elect. mixer, mix butter & 1 c of sugar on med-low speed, just til combined (don’t whip!). Add vanilla & 2 tsp water & mix til combined. in a med bowl, sift the flour & salt. with mixer on low, slowly add the flour mix to butter mix & mix til dough starts to come together. add the ginger, then dump onto a surface generously dusted with flour l& shape into a flat disk. Wrap in plastic, chill for 30 mins. Roll dough 3/8" thick & cut circles with a 2 3/4 in plain round cookie cutter. Place the cookies on an ungreased baking sheet & sprinkle with sugar. Bake for 20-25 mins, til edges start to brown.
