Dry Ingredients

350g Shredded Carrots

50g Oats

230g Ground Almonds

25g Chopped Walnuts

1 Shredded Apple

1 TBSP Ground Ginger

1 TBSP Cinnamon

1 TSP Ground Coriander

1 TSP Ground Cloves

1 Inch Vanilla Bean, ground–or 1 TSP Vanilla

Wet Ingredients

5 Eggs

100g Melted Coconut Oil

100g Fromage Blanc, non fat

Preparation

Mix together all the dry ingredients.

Separately, beat the eggs until well aerated, slowly add the oil and fromage while still beating.

Combine the two mixtures.

Bake in lined muffin tins or a greased cake pan, ensuring the batter is no more than 2" thick.

180 celsius for 30-40 minutes or until firm, less for muffins.
