•1 cup pumpkin purée (unsweetened)

•1 cup almond flour

•1/2 cup Xylitol

•1 egg

•1 Tbsp. pumpkin spice

•1 tsp. pure vanilla extract

•1/4 tsp. baking powder

•pinch sea salt

Directions

Preheat oven to 350 degrees Fahrenheit. Line a muffin pan with liners and set aside.

In a large bowl, combine the pumpkin, xylitol, and egg. Beat until fluffy.

Add in the remaining ingredients and stir until combined.

Using a small spoon, spoon the batter into the muffin tins, about 2/3 way full.

Bake for 25-30 minutes. Let cool for 10 minutes
