Ingredients

1 pound Ground Beef 80/20

1/2 pound Ground Pork

3 Large Eggs

4 cloves Chopped Garlic

6 ounces Grated Parmesan Cheese 6-7 ounces

2 bunches Chopped Italian Parsley 1-2 bunches depending on the size( tops no stems) about 1 cup chopped

5 slices Stale White Bread Chopped into SMALL cubes or ripped into pieces NOT bread crumbs

1 teaspoon Sprinkle of Black pepper, salt (IF) needed parm cheese can be salty enough

Preparation

Mix all ingredients in a bowl with hands, mix thoroughly

Form into balls of desired size( golf ball)

In a saute pan add mild olive oil about a 1/4 deep (set to medium)

when oil is hot add meatballs( don’t crowd the pan) do in batches

cook about 3 minutes if brown flip over to other side cook about 4 minute

at this point should be almost done and roll them around with a fork a little if sides look uncooked

take one out and cut in 1/2 ,it’s done when no pink in center but don’t overcook
