Ingredients
Measure and Sift
3 cups of cake flour
1/2 tsp baking powder
1 1/2 tsp baking soda
3/4 tsp salt
2 1/4 cups sugar
Measure into mixer
3/4 cup shortening or oleo
Measure into bowl
1 1/8 cup sour milk
1 1/2 tsp vanilla
2 whole eggs and 1 yolk
1 1/2 cups mashed ripe banana
Preparation
To make sour milk add 1 tbsp of vinegar to milk Mix shortening just enough to soften Sift in dry ingredients add 3/4 cup sour milk and beat at #2 speed for 2 minutes Add Eggs, vanilla and remainder of milk and beat 1 minute longer at #2 speed Add mashed banana and beat 1 minute more
Bake in greased loaf pan 375 F for 35 minutes or until toothpick comes out clean
