Ingredients
10 lbs carrots, peeled
6 lbs beef short ribs
3-5 lbs beef soup bones (for flavor!)
1 tbsp salt
3/4 c brown sugar
1 tbsp flour
honey to taste (lots!)
Preparation
Dredge the meat in flour seasoned with salt and pepper and brown on all sides. Remove from heat and set aside. Cut carrots into large pieces. In a large pot, put half of the carrots, all of the short ribs, soup bones, salt, and brown sugar. Then add the other half of the carrots, 16oz of water (or beef stock), and sprinkle flour on top. Cook over medium heat for 3 hours. Add honey to taste, then bake, covered, at 350 degrees for 90 minutes. Taste for sweetness, add more honey if desired. Bake, uncovered, for 2.5 hours more to thicken.
