Ingredients
1 box frozen chopped spinach (defrosted)
1 large clove garlic (chopped)
1/2 c. rice
2 T. butter
1 14 oz. can diced tomatoes
1 1/2 t. salt (I often use 1/2 t.)
1/2 t. ground pepper
Preparation
Brown chopped garlic in butter (Be careful, this should take just seconds. It burns quickly.) Add tomatoes, spinach, and rice. Mix well. Bring to a full boil. Cover tightly and simmer for 15 min. Add seasoning and simmer another 15 min. Watch at the end and add more water ( a few teaspoons if it’s getting dried out too much) Can be put in a buttered bowl to serve.
