Ingredients

2lbs chicken (I used boneless skinless breasts, thin)

2 cans Italian tomatoes

½ cup chopped onion

2 t. minced garlic

2 T olive oil

basil and oregano

Kalamata olives to taste. (1/3 jar)

Feta cheese

Couscous or orzo

Preparation

Heat oil in cast iron pot. Salt and pepper chicken, then brown well in pot. Remove from pot. Mix tomatoes, olives, garlic, onion, black pepper and basil and oregano. Put in pot. Put chicken back in pot, cover and cook at *350 for around 40 minutes. Serve on top of couscous or orzo. Top with feta cheese.
