Ingredients

1 cup All Purpose Flour

1 teaspoon Baking Powder

1 tablespoon Sugar (can adjust to taste)

1/2 teaspoon Salt

1/2 cup Greek Yogurt (Traditional Style)

1/2 cup Low Fat Milk (Whole can be used)

1 Egg

1/8 cup Vegetable Oil

1/2 teaspoon Vanilla Extract (optional, to taste)

Preparation

In medium sized bowl, sift then mix together; flour, baking powder, sugar, salt.

In small bowl, whisk egg.

Add to egg; oil, yogurt, milk and vanilla, then whisk only until combined.

Add the wet mixture to the dry mixture. Mix only until combined.

Preheat large nonstick pan over medium high heat.

Spread ~ 2 tsp vegetable oil throughout pan.

Pour large spoonfuls onto pan. Turn heat to Medium. (3 large pancakes in each batch)

Wait until pancakes bubble to check bottoms. Flip once golden brown.

Cook until each pancake is golden brown on each side and fluffy!

Serve with pats of butter on each pancake and top with your favorite syrup or honey.
