Ingredients
1 tablespoon canola oil
2 tablespoons water
1 medium yellow bell pepper, cored, seeded and diced
1/4 cup chopped onion
1/2 teaspoon minced garlic
1 pound fresh green beans, trimmed and cut into 1 inch pieces
1 teaspoon dried basil
1/4 teaspoon salt
1/1 cup freshly grated Parmesan cheese, divided
Preparation
In large, heavy skillet, heat canola oil over medium heat. Add water, bell pepper, onion, and garlic. Cook until onion is soft, about 3 minutes. Add beans, basil, and salt. Cover and steam until beans are just tender, about 7 minutes. Remove from heat and stir in 1/4 cup of the Parmesan. Transfer to serving dish and sprinkle with remaining 1/4cup Parmesan. Serve immediately.
