Ingredients

1-1/2 pounds green beans

1/4 cup pine nuts, toasted

2 tablespoons finely chopped fresh parsley

1-1/2 teaspoons lemon zest, finely grated

4 teaspoons olive oil

Preparation

Cook beans in boiling salted water, approximately 3-5 minutes. Drain and chill immediately in ice water. Drain. May be done in advance and refrigerated.

If chilled, warm green beans. Toss with remaining ingredients and serve.

Toasted pine nuts:

Toast nuts in shallow baking pan in a 350 degree F. oven until golden, 5 to 10 minutes.
