Ingredients
1 to 1 ½ lb ground beef
½ to 1 cup chopped onion
Several shakes chili powder
Taco seasoning pack
1 can mild green enchilada sauce
1 can cream of chicken soup
1 to 1 ½ cup sour cream
1 can chopped green chilies
3 cups grated Mexican cheese
Soft corn tortillas
Preparation
Brown beef and onions. Add chili powder, ½ cup water and taco seasoning. Cook a few minutes. Mix in about ½ of cheese and a little bit of the sauce made by mixing the soup, green chilies, sour cream and enchilada sauce. Spray casserole with Pam. Put some beef mixture on a corn tortilla and roll up, place in dish seam side down. Continue, then pour rest of sauce on top. Bake at *375 for about 15 to 20 minutes. Just before done, sprinkle rest of cheese on top.
