Ingredients
1 whole pineapple
1/2 cup stick butter
Lime juice
Sugar in the raw
Freshly ground nutmeg
Vanilla bean paste
Preparation
Cut bottom and top off of the pineapple and discard. Leave the rest of the rind/husk on. Cut the pineapple in half lengthwise. Cut each half into 6 - 8 pieces - lengthwise. Melt the butter. Add in sugar until a thin paste is formed. Add lime juice, nutmeg, and vanilla to taste. Baste the pineapple wedges with the paste. Cook on a grill over medium heat until lightly browned on both sides. Cut into bite-sized pieces. To eat, hold by the rind and eat the flesh.
