Ingredients
2 avocados
1 small red onion - diced
1 garlic clove, minced - mashed to a paste with 1/2 tsp salt
4 teaspoons fresh lime juice (or to taste)
1 chile pepper in adobe sauce - chopped
1/2 jalapeno - chopped with as many seeds as heat you like
1/2 tablespoon olive oil
1/2 can petite dices tomatoes - well-drained
1 handful cilantro - chopped leaves
1 salt & pepper - to taste
1/2 teaspoon ground cumin
Preparation
2 hours prior to serving, halve and pit the avocados and scoop the flesh into a bowl.
Add all other ingredients on top of the avocados. Cut all ingredients in to avocados with a knife to coarsely mix.
