Ingredients
Several tablespoons of fresh guacamole (or substitute avacado but will be less spicy/tasty)
Handful pine nuts
A few tablespoons feta cheese
Arugula
Tortilla
Preparation
Place all items in a line in the middle of the tortilla, leaving some room around the edge for folding into a burrito shape. Put a line of arugula down first, then guacamole, pine nuts, and feta. This way, the arugula will get tamped down and more manageable. Fold in two ends (at the end of the row of food), then turn and roll all into a burrito shape. Enjoy.
