Ingredients
1 tbsp oil
Couple chopped garlic cloves
1 onion, sliced
1 can lentils (other beans would work)
1 small can tomatoes (chop if they’re not already cut up)
Some leftover cooked ham
About 2 tbsp of soy sauce
Chipoltle chili powder to taste (1/4 tsp?)
Preparation
Heat a little oil in a frying pan over medium heat. Add the onion, garlic and chili powder and cook until the onion softens. Stir in the tomatoes and lentils, season with the soy sauce and cook until the tomatoes start to break down. Add the ham and continue cooking until it’s hot. Serve - some crusty bread would be nice.
