Ingredients
2 lbs ground beef
1 onion, chopped
2 green bell peppers, chopped
1 batch ground beef seasoning mix
4 eggs, beaten
4 cups whole kernel corn (canned or frozen)
4 tomatoes sliced
2 cups crushed cornflakes (used on reheating day)
1 stick butter, melted (used on reheating day)
Preparation
Freezing Day 1- In a medium skillet over medium heat, brown ground beef, onion, and green peppers 7-10 minutes until ground beef is fully cooked. Drain. Stir in seasoning mix. Add eggs and mix well. Remove from heat. 2 - Prepare a 9" x 13" casserole dish for freezing or use an aluminum pan. 3- Layer the bottom of the casserole dish with 2 cups of corn. Add half the meat mixture on top of the corn, followed by a layer of sliced tomatoes. Repeat the layers. 4- Wrap well and freeze.
Reheating Day 1- Defrost casserole in the refrigerator overnight. Top with crushed cornflakes, and pour melted butter over the top of the cornflakes. 2- Bate at 350 degrees for 45 minutes
