Ingredients

1 pound Ground Chicken

1 onion, chopped

3 stalks Celery, sliced

3 Carrots, sliced

1 Green pepper, chopped

1 Zucchini, diced

28 ounces Tomatoes, canned

14 ounces Chick peas or other beans, canned (rinsed and drained)

2 tablespoons Tomato paste

3 cups Chicken Stock

2 tablespoons Oregano and/or Basil (Herbs de Provence)

3 cloves Garlic

1/4 cup Rice or Barley

1 teaspoon Pepper, ground

Preparation

  1. Brown the meat in a large pot with a little Olive Oil. Add onions, and Garlic and cook until onions are soft.

  2. Add celery, green pepper and carrots and cook for about 5 mins. Add Herbs

  3. Add zucchini, tomatoes, stock and tomato paste and stir. then add beans if using.

  4. Bring mixture to a boil, add rice and then simmer for 20 minutes or so and you are done….add salt and pepper to taste.
