Ingredients

1 1/2 lbs young, very slender green beans

2 T Olive oil

6 cloves garlic, minced

2 T dried white breadcrumbs

2 T chopped flat-leaf parsley

salt and freshly ground pepper

1 oz butter

Preparation

  1. Drop green beans into a large pot of boiling salted water and cook uncovered over high heat for about 6-8 minutes. Drain the bean s in a colander, then drop immediately into a large quantity of very cold water to retain color. Drain.
  2. Heat the oil in a nonstick 10-in sauté pan over low heat. Add the garlic, breadcrumbs, parsley, salt and pepper, stirring for 1 minute. Add the butter and, when it has melted, add the beans and stir to reheat. Serve immediately.
