Ingredients

1/2 cup soy sauce

1/2 cup pineapple juice

1 tbl brown sugar

1 tbl chopped garlic

1 tbl ginger

1 1/2 lbs chicken cut into 1" pieces

1 each red & green peppers, cored, seeded & cut into 1" chunks

1 pineapple, peeled, cored & cut into 1" cubes

1 onion, cut into 1" pieces

24 grape tomatoes

Preparation

  1. Combine soy sauce through ginger; whisk to combine. Pour into a zip-top bag; add chicken. Refrigerate 1 hour.

2.Remove chicken, reserving marinade. Thread chicken, peppers, pineapple, onion & tomatoes onto skewers. Pour remaining marinade over skewers.

  1. Grill on high heat until done.
