Ingredients

3 cups sweet potatoes, cooked and mashed

1/3 cup packed brown sugar

1/3 cup skim milk

2T butter melted

1t vanilla extract

1/2t salt

2 egg whites

1/2 cup packed brown sugar

1/4 cup all purpose flour

2T low fat margarine chilled

Preparation

Preheat the oven to 350

Coat a 2 qt baking dish with cooking spray

In a large mixing bowl add the mashed sweet potatoes, 1/3 cup brown sugar, skim milk, melted low fat margarine, vanilla extract, salt, and egg whites. Mix well and transfer to the baking dish, spreading evenly.

In a medium sized mixing bowl, add the 1/2 cup brown sugar and flour. Slowly add in the 2T chilled low fat margarine and stir until the mix has the consistency of coarse crumbs.

Sprinkle the crumb mixture over the sweet potatoes and bake for 30 minutes.
