Ingredients
4 pound One whole frying chicken, 3 1/2 to 4 pound
1 one large sweet onion, peeled and cut into eighths
4 4 apples, cored and cut into sixths
2 tablespoons 2 Tablespoons Olive Oil
1/8 cup 1/8 Cup Water
2 tablespoons 2 Tablespoons Oregano
2 tablespoons 2 Tablespoons Rosemary
2 teaspoons 2 Teaspoons Garlic Powder
2 teaspoons 2 Teaspoons Black Pepper
Preparation
Heat oven to 375 degrees. Rinse chicken and dry inside and out with paper towels.
Place chicken in a large roasting pan and season with half of the herbs and spices
Peel and cut onion into eighths. Place in a bowl and mix well with olive oil and the remainder of the herbs and spices. Arrange around the chicken
Bake in preheated oven for 45 minutes. Wash and core apples. Cut into sixths.
Remove chicken from oven and add apples.
Return to oven and bake for another 45 minutes or until chicken is nicely browned and meat therometer inserted into thickest portion of breast registers 180 degrees.
Serve with baked potatoes or yams and a tossed salad
