1 pound ground beef, salt and pepper

1 onion, diced, celery and garlic

6 red potatoes,

5 carrots, thinly sliced

1 zuchini diced

1 (15 ounce) can whole kernel corn, drained

2 cups frozen green beans (opt)

1 (46 fluid ounce) bottle tomato-vegetable juice cocktail and 1 can tomatoes and chilies

1 cup water (did not add)

Preparation

In a large pot over medium heat, cook beef, onion and celery and garlic. Seasoned with salt and pepper. Add juice, tomatoes, and carrots and cook for awhile. Then add potatoes, zuchini and corn. Simmer over low heaminutes, until flavors are well blended and soup is hot and other vegetables are cooked.
