Ingredients
3 lbs. carrots, peeled and cut into sticks
2 bunches scallions, tops and roots trimmed
6 Tbsp. melted butter
3/4 tsp. salt
3 Tbsp. honey
juice and grated rind of 1 lemon
Preparation
Preheat oven to 350 deg. Immerse the carrots and scallions in boiling, well-salted water and cook until tender crisp. Place in cold water to stop cooking and drain. Combine the remaining ingredients, varying the proportions accruing to the sweetness of the carrots. Place carrots and scallions in a baking dish, pour the sauce over them and bake for 15 min.
