Ingredients
1 package skinless boneless chicken thighs (6 thighs)
flour, salt and pepper
a bit of oil
small onion, sliced
sweet red or bell pepper, sliced
several shakes of crushed red pepper flakes (a tsp or so)
1 tbsp minced ginger (I buy mine in a tube)
2-4 garlic cloves, chopped
2 tbsp honey
2-4 tbsp tamari or soy sauce
couple handfuls frozen mango chunks
Preparation
Slice the chicken and lightly coat with flour, salt and pepper.
Heat oil in a high-sided frying pan. Add onion, bell pepper, pepper flakes, ginger, garlic and cook until the onion and pepper are soft. Add the chicken and stir-fry until the chicken is about cooked. Add soy sauce, honey and mango and continue cooking until mango is hot. Serve over rice.
