Ingredients

3 Cups Flour (Unbleached All-Purpose)

3/4 Cup Sugar

1 tsp Baking Soda -

1 TBS Baking Powder

1 1/2 tsp Salt

2 Eggs, well beaten

1 3/4 Cup Buttermilk

1 1/2 Cups Currants

6 TBS Butter (divided) 4TBS melted and cooled

Preparation

Preheat Oven to 350. Sift flour, Sugar, Baking Soda, Baking Powder, Salt. Add Currants to coat.

Mix wet ingredients. Butter, Eggs, Buttermilk. mix into dry ingredients.

Grease round pan with 2 TBS of Butter. Line with cut round of wax paper to cover only the bottom. Pour mix into pan. Bake for 35-40 minutes, until set. Cool to room temp
