Ingredients

1 tbsp Oil

1/2 cup coarse chop Onion

1/2 cup coarse chop green bell pepper

2 garlic cloves, minced

2 cups water

1 can stewed (or diced) tomatoes, undrained

8 oz tomato sauce

1/2 tsp dried Italian seasoning

1/4 tsp cayenne pepper

1/8 tsp Fennel Seed (Crushed)

1 cup uncooked white rice

12 oz gourmet mixed mushrooms

12 large shrimp

Preparation

Heat Oil in large skillet over med-high heat, add onion, bell pepper, mushrooms & garlic. Cook and stir for 2-5 minutes

Stir in water, tomatoes, tomato sauce, Italian and cayenne seasoning, and fennel seed. Bring to a boil. Add rice. Reduce heat to low, cover and simmer 20 to 30 minutes or until rice is tender. Stir occasionally.

Stir in shrimp. Cover, simmer an additional 5 to 10 minutes, or until shrimp are cooked. Stir occasionally.
