Ingredients
4 cups flour
1 cup unsalted butter
1 1/4 cups sugar
1/4 teaspoon salt
2 tablespoons heavy cream
4 egg yolks
2 teaspoons vanilla
1 egg white, beaten
1/2 cup finely chopped nuts
1 or 2 jar currant jelly
1 bunch confectioners sugar
Preparation
add egg yolks, heavy cream and vanilla
stir in flour
wrap tightly and chill several hours
roll out on floured board to 1/8" thick
cut with floured cutter, cut holes in center of half the cookies
brush top halves with egg white and sprinkle with nuts
bake at 350 for 10 minutes
When cooled to room temperature, spread small amount of jelly on the bottom halves, top with the top halves. Dust with confectioners sugar.
