Ingredients

All cans are 15-16 oz

2 cans Black Eye Peas, drained

1 can Black Beans, drained

1 can corn, drained

1 red onion, chopped

3 cloves garlic, chopped fine

2 jalapeno peppers, chopped

1 bell pepper, chopped

1/2 bunch cilantro, chopped

16oz bottle Zesty Italian salad dressing

Big bag of corn or tortilla chips

Optional:

2-3 tomatoes, chopped

2 avocados, chopped

Preparation

  1. Chop everything up.
  2. Gently mix all veggies in a big bowl.
  3. Add enough Zesty Italian dressing to get the consistency & wetness you want. (We usually use the whole bottle) Gently mix again.
  4. Add salt & pepper to taste.
  5. Refrigerate overnight or at least a couple hours.
  6. Serve with your favorite chips. We use Tostidos Scoops and Hint of Lime.
