Ingredients
1 Cup flour
1.5 Cup bran flakes
1 Cup sugar
1 Cup raisins
.5 t baking powder
.5 t cinnamon
.5 t baking soda
.5 t salt
.75 Cup buttermilk
.75 Cup vegetable oil
2 large eggs
Preparation
Combine dry ingredients; mix well In separate bowl, beat buttermilk, oil & eggs until frothy Make a well in center of dry ingredients, pour liquid mixture and fold into dry ingredients with spatula until combined Refrigerate batter for at least 2 hours or overnight Pre-heat oven to 400° Divide batter evenly into 12-muffin pan Place pan in oven and immediately reduce heat to 350° Bake for 20-25 minutes Let rest for 10 minutes before removing muffins from pan
