Ingredients
1 lb Pinto Beans , Dry
1 Onion
1 Tbsp bacon grease (approx 8 pieces)
1 can Enchilada sauce, mild
1 tsp Chili powder
1/2 tsp cumin
1 or 2 ham hocks
Garlic Salt
Salt Pepper
Water - enough to cover beans
Serve with:
Shredded Cheese
Sour Cream
Flour Tortillas
Corn Bread
Preparation
Rinse and sort beans. Soak beans overnight in 4 cups water.
Rinse beans again and place in crock pot. Add remaining ingredients (not shredded cheese, sour cream or flour tortillas) in crock pot.
Cook on high until done.
Serve with Shredded cheese, sour cream and flour tortillas or corn bread.
