Ingredients
2 cup(s) Bulgur Wheat Dry
2 cup(s) Cucumbers Seeded, Diced
1/2 cup(s) olive oil extra virgin
2 cup(s) Curly Parsley Chopped
4 whole(s) Plum Tomatoes Seeded, Diced
1 cup(s) Fresh Mint Chopped
4 clove(s) Garlic Chopped
1 cup(s) kalamata olives Chopped
4 whole(s) Lemons Juiced
Preparation
PLace bulgur wheat in a large bowl and fill with cold water, at least a quart. Let stand to soak water, approx 2 hours. Drain with a wire strainer and let stand for 30min to completey drain any excess water.
Prepare and combine all the other ingrediants. Mix in the bulger and season with sea salt & cracked peppercorns.
To make a meal, top with crumbeld Feta Cheese
