Ingredients
1/4 cup red wine vinegar
1/2 cup extra-virgin olive oil
1/4 tsp. hot pepper sauce
2 cups canned tometo sauce
1 clove garlic
4 large ripe tomatoes, peeled & seeded
1 small green pepper, seeded & cored
1 small red pepper, seeded & cored
1 small yellow onion
3 green onions
1 cucumber - peeled & seeded
salt & pepper to taste
Preparation
Whisk together red wine vinegar, olive oil, hot pepper sauce, and canned tometo sauce in a mixing bowl.
Combine vegetables in small batches in a blender, adding juice mixture gradually to keep blades from clogging.
Puree.
Once all vegetables have been pureed, add salt & pepper to taste.
Cover & chill for at least 4 hrs. Taste and adjust seasoning as needed.
Serve cold.
Can add pieces of diced red pepper, cucumber & avocado if desired.
