Ingredients
5 large carrots
6 cups broth
2 large yams, peeled cut into 1" cubes
I packet Kashi pilaf
1/2 teaspoon cayenne
1/8 teaspoon ground nutmeg
salt and pepper
1 cup plain yogurt
Preparation
Dice carrots and yams. Combine with Kashi and broth in large saucepan. Bring to boil, reduce heat and partially cover. Simmer til vegetables are tender, approximately 30 minutes. Using a hand blender, puree the vegetables, leaving some larger lumps. Add the cayenne, nutmeg, salt and pepper to taste. Serve with a dollop of yogurt.
