Ingredients

1 Boston Butt roast, about 5 pounds

1 Cup Firmly Packed dark brown sugar

1/2 Cup granulated Garlic

1/2 Cup Kosher Salt

1/2 Cup Paprika

2 Tablespoons granulated onion

1 tablespoon dry mustard

1 tablespoon creole seasoning

1 tablespoon chili powder

1 tablespoon ground red pepper

1 tablespoon ground cumin

1 tablespoon ground black pepper

Preparation

Marinate pork in rub for 4-12 hours. Put in smoker at 200° fat side down. Don’t open the smoker for at least 4 hours, it will probably take a couple of hours to get back up to 200° Leave in smoker until the internal temperature is at least 165°. It should take 14-16 hours. Can spray with apple juice occasionally if desired.
