Ingredients

4-5 pound trimmed and tied beef tenderloin

2 pounds sliced bella mushrooms

6 tablespoons melted butter

lawry’s lemon pepper 2-3 teasp

dry sherry

Preparation

preheat oven to 400

bring beef to room temperature

saute sliced mushrooms in butter and set aside

put beef in a roaster pan.. not on a rack– and rub with lemon pepper

cook at 400 for 30 min

cook at 375 for 10 min

spoon mushroom mixture around beef and pour 1 cup of sherry over the top

cook for approximately 10 min more and take out around 150 degrees for medium– but baste a lot!! in these 10 mins with stuff at bottom (may need to add some more sherry if it starts to get dry)

tent with foil and wait 10 min before carve
