Ingredients

1 medium to large size kohlrabi, washed and peeled

1 medium onion, peeled

1/2 cup all purpose flour (gluten free blend for gfers)

1 teaspoon baking powder

1/2-1 teaspoon sea salt

2 eggs, lightly beaten

extra virgin olive oil

Preparation

Cut the kohlrabi and onion into chunks, small enough to fit through the feeder tube of your food processor. Grate the kohlrabi and onion, together, using the processor’s grating disk.

You need about 2 cups of grated kohlrabi and 1 cup of grated onion for the recipe.

Place the 3 cups of grated kohlrabi/onion mixture in a clean dish towel, wrap and squeeze out as much water as possible.

Transfer the vegetables to a mixing bowl, and combine with the remaining ingredients (except oil).

Heat a heavy skillet of medium high heat and add a thin layer of olive oil.

Pan-fry kohlrabi in 1/4 cup scoops, about 2 minutes per side until golden. Drain on paper towels.

Serve hot with cold Tzatziki, catchup or another favorite sauce.
