Ingredients
1 head roasted garlic
2 tablespoons EVOO
2 lemon zest
1 teaspoon paprika
1 teaspoon cumin
1 teaspoon coriander
1/2 teaspoon cinnamon
1 teaspoon salt
1/2 teaspoon pepper
1 boneless leg of lamb butterflied
Preparation
- Mash garlic and add next 8 ingredients. Make 1/2 inch slits in lamb. Rub paste all over lamb. Refrigerate overnight. Bring to room temp. Light grill med high heat. Fat side down, char for 15-20 minutes. Flip and repeat. Let rest for 15 minutes. Slice thin.
