Ingredients:
3 cups grated zucchini
3 cups grated carrots
1 tablespoon olive oil
3 large eggs
1 cup grated parmesan cheese
20 ounce fresh leaf spinach
2½ cups marinara sauce or 1 jar of Raos
½ lb lasagna noodle
8 ounces shredded provolone cheese
Preparation
Directions:
- Sauté zucchini, carrots, and spinach separately in ½ tbls oil each until tender
- Combine eggs and parmesan and provolone.
- Place each veggie in a bowl and add ¼ of egg-cheese mixture to the 3 vegetables.
- Cover a 9 inch square baking dish with marinara sauce.
- Cover sauce with noodles.
- Spread spinach over noodles; then, carrot mix; then, zucchini.
- Top with noodles, then marinara sauce.
- Cover tightly with foil.
- Bake at 350* for 30 minutes.
- Remove foil and sprinkle with remaining egg-cheese mix.
- Bake 10 minutes more, uncovered.
- Let rest 10 minutes before cutting.
