Ingredients:

• 3 cups grated zucchini

• 3 cups grated carrots

• 1 tablespoon olive oil

• 3 large eggs

• 1 cup grated parmesan cheese

• 20 ounce fresh leaf spinach

• 2½ cups marinara sauce or 1 jar of Raos

• ½ lb lasagna noodle

• 8 ounces shredded provolone cheese

Preparation

Directions:

  1. Sauté zucchini, carrots, and spinach separately in ½ tbls oil each until tender
  2. Combine eggs and parmesan and provolone.
  3. Place each veggie in a bowl and add ¼ of egg-cheese mixture to the 3 vegetables.
  4. Cover a 9 inch square baking dish with marinara sauce.
  5. Cover sauce with noodles.
  6. Spread spinach over noodles; then, carrot mix; then, zucchini.
  7. Top with noodles, then marinara sauce.
  8. Cover tightly with foil.
  9. Bake at 350* for 30 minutes.
  10. Remove foil and sprinkle with remaining egg-cheese mix.
  11. Bake 10 minutes more, uncovered.
  12. Let rest 10 minutes before cutting.
