Ingredients
8 chicken thighs
4 crushed garlic cloves
½ cup olive oil
Lemon juice from 2 squeezed lemons
2 tablespoons paprika
1 6oz can tomato paste
1 cup plain no fat Greek yogurt
3 - 4 tablespoons sumac **
1 tsp salt
3 tablespoons freshly ground black pepper
10-15 skewers **
Preparation
- Cut chicken breasts into nugget-size chunks.
- In a mixing bowl, mix all ingredients together to create a marinade.
- Place chicken in bowl with marinade and marinate overnight or at least 8 hrs
- put chicken on skewers and grill; turn only once if possible to keep moist.
