Ingredients

1 cup butter, softened

1/2 cup sugar

2 cups flour

5 eggs

1 3/4 cups sugar

1/4 cup flour

3 lemons, juiced

Preparation

Preheat oven to 350 degrees

In a medium bowl, blend together softened butter, 2 cups flour, and 1/2 cup sugar using a fork or pastry cutter. Press into the bottom of an ungreased 9x13 pan.

Bake for 15-20 minutes or until firm and golden. Set aside.

In another bowl, whisk together the remaining 1 3/4 cup sugar and 1/4 cup flour. Beat in the eggs and lemon juice.

Pour over baked crust and bake for 20 minutes. Wiggle the pan to see if middle is cooked. Should not be runny.

The bars will firm up as they cool.
