Ingredients
3/4 cup buttermilk
1/4 cup sugar
1 1/2 tsp vanilla extract
1 egg
2 cups flour
1/4 cup dry oats
1 tbsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
3 tbsp butter, cold and diced
1/3 cup dried cranberries
1/2 cup white chocolate chips
Glaze:
1 tbsp lemon juice
1/2 tsp vanilla
1 1/2 tbsp milk
3/4 cup powdered sugar
Preparation
- Preheat oven to 375 degrees.
- In a bowl or mixer, mix together buttermilk, sugar, vanilla, and egg.
- In a separate bowl, sift together flour, oats, baking powder, cinnamon, and salt.
- Cut the butter into the flour mixture with pastry cutter or two knives.
- Mix in cranberries and white chocolate into flour mixture.
- Add flour mixture into buttermilk mixture, stirring until combined.
- Place dough on baking sheet lined with parchment paper and form into a 9-10 inch circle.
- Bake 22-25 minutes or until center is cooked.
- After removing from oven, take a pizza cutter and cut into 8-12 triangles.
- While scones are cooling, prepare glaze by mixing it all together in a small bowl.
- Drizzle over scones and ENJOY!
