Ingredients
3 eggs
3/4 cup white sugar
1/2 cup fresh lemon juice
2 t lemon rind
1/2 cup melted butter
Preparation
In medium microwave safe bowl, combine eggs and sugar. Whisk well. Add lemon juice, rind and butter. Microwave, uncovered 3-5 minutes, stirring every minute until thickened (it should coat the back of a spoon). Allow to cool in fridge where it will set further. (If your microwave is newer, or very powerful, start a couple notches below full power.) If you end up with a grainy first batch, pass it through a fine sieve. Serve with fresh fruit, meringue, ice cream or yogurt, or fill mini-tart shells.
