Ingredients

1 Lemon (zested and quartered lengthwise)

3 inches of ginger, peeled, sliced

8-10 cloves

5 peppercorns

1 tsp star anise

1 tsp cardamom seeds, or 3 cardamom pods

1 cinnamon stick

1/8 - 1/4 cup honey (to taste)

Preparation

  1. Bring medium pot of water to rolling boil
  2. cover and let simmer for 5 minutes 3.remove lemons
  3. add honey, until desired sweetness is reached
  4. reduce heat to very low, and keep warm for 1.5 hours before serving, to let steep.
