Ingredients

1/2 cup shortening

2 eggs

Scant 1/2 cup milk

1/2 tsp salt

1 cup sugar

1 1/2 cups flour

1 tsp baking powder

2 lemons - rind of 2, juice of 1+

1/4 cup sugar

Preparation

Pre-heat oven to 325 degree. Cream shortening and sugar. Add eggs and beat. Add milk and sifted ingredients. Add grated lemon peel and a little lemon juice. Bake in a well-greased loaf pan for 45 minutes, or until set in the middle. Remove from the pan and prick with a fork. Mix the remaining lemon juice and the 1/4 cup sugar to form a glaze, and brush it over the warm loaf.
