Ingredients
1 pound ground beef
1 12 oz. package of egg noodles
1 onion, chopped
2-3 cloves of garlic, minced
2 1/2 teaspoons dried thyme
1/2 cup chicken broth
1 cup of plain greek yogurt
1 1/2 teaspoon Dijon mustard
Juice & zest of one lemon
Preparation
Cook the egg noodles according to their directions & drain. Brown the ground beef (season with salt & pepper) and drain. In beef pan add onion, garlic, thyme. Cook until onion is translucent, approx. 5 minutes. Add the broth and cook until the liquid reduces by half- approx. 5 minutes. Lower the heat and stir in the yogurt, mustard, lemon zest, and juice. Stir throughly and allow to heat through on the stove.
