Ingredients

1 cup quinoa

1 tbs olive oil

2 tbs lemon juice

salt and pepper

1 large clove of garlic, minced

2 tbs. Parmesan cheese

Preparation

In a small saucepan, combine water and quinoa with a pinch of salt and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes or until all liquid is absorbed. Let stand for 5 minutes. Squeeze in lemon juice, drizzle olive oil, and mix in garlic and cheese.
